You can see the two controllers on the table about a second before an order is given, so I doubt it.

If he's holding a controller in each hand and operating both of the games (which would be a feat in itself) how is he holding the camera too? Also you can see the command box thing does a complete order at a time instead of in chunks like it'd be if you were manually entering it with the controls.
I'm pretty sure it's real, Ubisoft have mentioned it before somewhere or other months ago that parrots can operate the voice commands.
